Unsalted butter – I like to use unsalted butter for buttercream because I can control how much salt is in the recipe. The butter must be softened. Room-temperature butter will give you light, fluffy buttercream frosting.

Powdered sugar – Powdered sugar adds sweetness and creates a nice consistency.

Almond extract – The almond flavor comes from the extract. There is no vanilla extract in the recipe because vanilla would reduce the almond flavor. Although there are other flavors in this frosting recipe, almond is the primary flavor.

Sea salt – Salt is the ingredient that prevents the almond buttercream from tasting too sweet.

Milk – Milk smooths out the frosting, giving it a creamy texture. If you have heavy cream, you can use that instead.

Honey – Honey has a mild sweetness that prevents the almond extract from being too strong.

Orange zest – The sourness from the orange goes well with almonds.

How To Make Buttercream Frosting

Beat the butter – Cream the butter with a stand mixer fitted with a paddle attachment. Once the butter has become pale in color, it’s time to add the sugar.

Add Powdered Sugar – After creaming the butter to a fluffy consistency, add the powdered sugar. Mix on high speed for at least 2 minutes.

Combine the other ingredients – Next, add sea salt, almond extract, milk, honey, and orange zest. Set your mixer to medium-high speed. Then mix for one more minute. The buttercream frosting should be soft and creamy.

Substitutions and Variations for Almond Frosting

This almond buttercream recipe can be made without unsalted butter. If you have salted butter at home, you can use that instead. Make sure it’s at room temperature. If you opt for salted butter, remember to leave out the sea salt.

Tips For Making Buttercream In The Summer

During the summer, frosting melts quickly. If you are making frosting in an unconditioned kitchen, follow these steps to keep your buttercream from melting.

  • First, you’ll need a thermometer. After making the frosting, use a thermometer to check the temperature.
  • If the frosting is over 65°F, put it in the refrigerator.
  • Check the temperature of the buttercream in five-minute intervals. This step is crucial!
  • Once the buttercream frosting is 65°F, you can transfer it to a piping bag for decorating. Or spread the frosting with an icing spatula.

Ingredients

  • 2 cups powdered sugar
  • ½ cup unsalted butter room temperature
  • ¼ tsp sea salt
  • 1 tsp almond extract
  • 1 tbsp honey
  • 2 tbsp milk
  • ¼ tsp orange zest

Instructions

  • Add unsalted butter to a bowl. Use a stand mixer fitted with a paddle attachment to cream the butter. Set the mixer to high speed and beat for at least 2 minutes.The butter should look pale in color.
  • Add the powdered sugar to the bowl. Start on low speed and gradually work up to high speed. Mix on high speed for 2 minutes.
