I love to serve a delicious meal with roasted vegetables seasoned with fresh herbs. This is my idea of a wholesome celebration. Dinner prepared with fresh produce before the sweet indulgence of Easter dessert.
Traditional Easter desserts like carrot cake with layers of smooth cream cheese frosting are beloved by many. Recapturing the liveliness of spring with a burst of lemon makes for a light, tender cake. Though a traditional Easter dessert is a guaranteed crowd-pleaser, I opted for something different. For some reason, I loved the idea of decorating a cake with a bunny on top. The chocolate frosting could be the ‘dirt’ for an adorable Easter bunny. I decided to make a yellow cake with fluffy chocolate buttercream frosting. For the sake of saving time, I opted for a box cake mix.

Bake the Cake Layers:
Ensure all dairy products are at room temperature before mixing the cake batter. Combine the ingredients listed on the box of cake mix and follow the instructions. Evenly distribute the batter into prepared cake pans. When the cakes are cooled completely, wrap them with plastic wrap. Freeze cake layers for best results.
Prepare the Frosting:
Remove frozen cake layers from the fridge before making the frosting. In this case I used my favorite chocolate buttercream recipe, published by Eats Delightful.
Finishing Touches!
When the buttercream is ready, frost the cake. I piped a ribbon border with a Wilton 1G piping tip. You can add some character to your cake with icing decorations.
Cover the cake to lock in moisture.

There are so many variations you can make by using this shortcut. For instance, for a light, citrusy cake, try lemon cake mix instead. Perhaps you want to add some flare to your cake with carrots or bunny ears. That simple customization transforms a plain cake into a whimsical dessert.

But I disagree.
You can elevate the cake with homemade frosting.
