Combine filtered water and sugar to a medium sized saucepan. Set the heat to medium low and whisk occasionally. Simmer for 2 minutes and turn off the heat. Once the sugar has dissolved add the vanilla bean paste and stir. Let the simple syrup cool completely before transferring to a mason jar or airtight container.
For the Whipped Coffee
Add boiling water, instant coffee, and sugar to a mixing bowl. Whisk with a mixer and whip on high for 3 - 5 minutes. The coffee will thicken and triple in volume.
Pour 6-8 ounces of your favorite milk to a 12 ounce glass. Mix in 1 tablespoon of simple syrup. Then add ice if you’re drinking it cold. Top the milk with a scoop of whipped coffee. Stir and enjoy!
